Creamy Zucchini Soup
Here's a super simple and family-friendly recipe that is always a winner. Only 4 ingredients and minimal prep time!
INGREDIENTS:
2 onions
8 medium sized zucchinis
Salt (or salt substitution) to taste
Water
INSTRUCTIONS:

Saute the onions in water until lightly browned.

Wash zucchini, leave unpeeled, and cut into chunks.

Add the zucchini to the onions and continue sauteeing for about 10-15 mins till soft.

Cover the pot with the lid and continue to saute, stirring occasionally. (It will release its own juices.)

Add water to cover plus a little more.

Add salt (or salt sub) and pepper to taste and cook for about another 30 mins.

Blend with an immersion blender.
