Healthy Spanech Jibon

Sometimes childhood favorites can be modified to fit your lifestyle and habits all while still tasting delicious! Here is a great recipe for healthy Spanech Jibon.

Ingredients: 

  • 1 32 oz bag frozen spinach 
  • 1 large Spanish onion, small dice 
  • 3/4 cup egg whites 
  • 1 cup low fat cottage cheese 
  • 3 tbsp olive oil
  • 1 tsp salt 
  • 1/2 tsp pepper 

Directions:

In a large skillet, sauté the onion in olive oil.

Once the onion is caramelized and soft, add your frozen spinach and cook until all the water has evaporated and the spinach is fully cooked.

Cool down the spinach mixture completely and add in your eggs, cottage cheese, salt, and pepper and mix well. If the spinach mixture needs more add 1/4 cup cottage cheese.

Pour into muffin tins and bake on 350*F for about 45 mins.
