White Chocolate Chip Peanut Protein Brownies

This recipe is super simple and I'm very tempted to start telling you how good it actually is for you but first I want to say a little bit about what makes this brownie so special. This week I was tasked with the mission of using Integrated Supplements Whey Isolate Protein Powders in a unique recipe.

Immediately upon opening the box of powders, I decided that since it was lunchtime, I was going to make myself a drink. I didn't want to take out my blender and the package said I could just add liquid and stir. Chocolate Mint caught my eye so I added it to whatever was left in my morning coffee, then added milk, more ice, some whipped cream and cinnamon and lunch was served. It tasted fabulous! 

Now, if you know anything about me, you'll know I'm not the healthiest gal at the juice bar. I like carbs and I cannot lie but something about this protein just made me feel awesome.

It comes in a nifty compact clear container with a little measuring scoop. The flavor of the powder is not like the artificially flavored garbage you're used to tasting in a protein powder. It's not chalky and it actually tastes exactly like the flavor. The Chocolate Mint together with milk is like drinking a York peppermint patty, which happens to be one of my favorite chocolates. Plus, it's certified kosher dairy by the OU and did I mention there's no fake sugary aftertaste?

After making myself the drink at lunch, I took a few of the bottles to my mom's house and whipped up a Pina Colada protein shake in the Vitamix for the whole family. It was the perfect after-school snack for my hungry siblings who didn't want to wait until dinner to chow down. Since this particular protein is a whey isolate it's got more protein and less fat, lactose, and cholesterol than whey concentrate. You can almost add it to any recipe you want but I'm hoping to tempt you with these particularly yummy brownies.

Now about my secret ingredient... I'm a huge fan of the Hungry Girl founder Lisa Lillien. I've been getting her daily emails for years now and there was one thing she did that I always wanted to try. She combined a brownie mix with a can of pure pumpkin instead of adding oil and eggs. Since I was aiming for a healthier product I decided to give it a shot with this recipe. Honestly, I can say without a doubt that the brownies came out so good that I may never go back to adding oil and eggs. My husband said these were the best brownies he's ever had and he doesn't lie when it comes to food. The pumpkin doesn't add much flavor but what it does add is a dense, fudge-y quality to the brownies that we all crave.

These brownies are a cinch to put together and along with the pumpkin and protein, you won't feel guilty about eating one, or two or four... Let's get baking!

White Chocolate Chip Peanut Protein Brownies 

Ingredients :

  • 1 Box of your favorite Brownie Mix (I used good ol' fashioned Dunkin Hines Dark Chocolate Fudge)
  • 1 15 oz. Can of Pure Pumpkin (not pumpkin pie filling!)
  • 2 Scoops of Integrated Supplements Vanilla Whey Isolate Protein Powder
  • 2 Scoops of Integrated Supplements Chocolate Whey Isolate Protein Powder
  • 1/2 Cup of Roasted Peanuts
  • 1 Cup of White Chocolate Chips, divided

Directions:

Preheat oven to 325 degrees. In a large mixing bowl combine Brownie Mix, Pure Pumpkin and both Vanilla and Chocolate Protein Powders. 

 

Mix well with a spoon until mixture is smooth, about 1 minute. Add in the Roasted Peanuts and half of the White Chocolate Chips. 

Spray a 9x13 inch baking dish with non-stick spray. Add in brownie mix and bake for 30 minutes or until a toothpick comes out clean. 

 

Place remaining white chocolate chips in a small glass bowl. Microwave for 30 seconds three times on half power mixing each time until chocolate is melted and pourable. 

Transfer melted chocolate to a resealable bag, close the bag and make a small snip in one of the corners. Drizzle the melted chocolate in whichever pattern you like. 

 

Leave to cool for about an hour and then cut into squares.
